Chocolate Chia Breakfast Pudding!!

So I am a devoted Overnight Oats Fan…or more specifically an Oatmeal Parfait fan!  I love chia seeds, I love oatmeal, I love chocolate and I love sugar free syrup as a topping on pretty much everything. Even spaghetti, Elf Style…just kidding.  A new favorite of mine is Chocolate Chia Pudding that I adapted from the amazing Katie!  It doesn’t have the oats (although, you can add them), but it is like dessert for breakfast!!!

Recipe:

  1. 2.5 Tbsp Chia seeds
  2. 1 Tbsp cocoa
  3. 1.5 Tbsp chocolate protein powder
  4. 1 packet of stevia (or I have also used, 2 tsp agave)
  5. 1 cup almond milk (or any other form of milk)

Add dry ingredients …

Then add the milk.  I like to use my lovely little electric whisk that helps get it nice and frothy…

Now you are all set to put it in the fridge overnight.  When you get it in the morning, you want to stir it up again and then add your toppings.  I choose to add some banana slices, homemade chocolate crunch oatmeal, unsweetened coconut and a squirt of SF maple Syrup (of course).

Friday,  I made mine into a parfait since I had a lot of running around to do.  Volunteering at my son’s school while enjoying my amazing Chocolate Chia Breakfast Pudding = a great start to the day!!!
