A Lovely Version of Chia Pumpkin Pudding!!!

I saw the original recipe on Angela’s OSG website!  I knew right away I needed to try it!  I love pumpkin pie….but often leave the crust behind!  When this mentioned that it tasted just like pumpkin pie, I knew I was in for a treat….plus she layered it with homemade ginger cookies!  So what is a girl to do besides make both so I can layer mine as well!!!

Groff Girl’s Chia Pumpkin Pudding (adapted from OSG’s recipe)

1 1/4 cup chilled pumpkin

3/4 cup unsweetened almond milk

2 Tb chia seeds

1.5 tsp cinnamon

1 tsp nutmeg

1 tsp ginger

1Tbsp pure maple syrup

2 tsp molasses


Mix all ingredients together and chill in the fridge! 


Top with ginger cookies (crumbled) or FF cool whip (soooo good).  For a special treat layer it with the cool whip, ginger cookies or some crushed vanilla wafers!


Ohhh la la!  This is good.  I ate the whole batch on my own (don’t judge)….not in one sitting, though!  I could easily eat this at every meal!  I had some this morning before my race, and even added some extra chia to it for good luck!  So delicious!

  1. I’d like to try this! What are Chia seeds? Are they crucial to the recipe/taste?!

    • You might be able to get chia seeds at the bulk barn, but if not, just go to a health food store!! They are needed for the recipe because they are what thickens the pudding. Chia seeds expand in liquid so it gives more volume! I add them to my oats, so it makes my yummy oat parfaits thicker and more dense even though I only use 1/3c oatmeal :) Making another batch of pumpkin pudding today….I have eaten it everyday since I first made it!! SO GOOD!!
