Nutty Berry Cocoa Oats Parfait

So I had an amazing mx up this morning for my breakfast.  I didn’t make my oats last night, so I had to turn morning oats into overnight oats within an hour!  I had my neighbor’s daughter here (James’ best friend) and she exclaimed, “It’s so beautiful” when she saw them….success!

Yum, yum!!

Here is the breakdown for Nutty Berry Cocoa Oats:

  • 1/3 cup oats
  • 1Tb unsweetened cocoa
  • 2tsp chia seeds
  • 1/4 tsp cinnamon
  • 3/4 c water
  • 1/4 c vanilla soy milk
  • 1tsp natural peanut butter
  • 5-6 strawberries

I like to squirt a little sugar-free syrup on top!!

Mix oats, cocoa, chia seeds, and cinnamon in a microwaveable dish.  Add water and peanut butter, mix well.  Cook for 3 minutes on high, then let sit for 2-3 minutes.  Place in freezer for 30-40 minutes.  Take out of freezer, add soy milk and mix up.  Using a glass, mason jar, or parfait dish and add sliced strawberries topped with some oats, continue this pattern until the cup is full and the oats are gone!  Optional: add a sprinkle of some homemade chocolate crunch granola!  Enjoy!!!
